Spinach and Pecan Salad with Lemon Dressing

Serves: 4

Ingredients
  • 1 lb. fresh spinach, cleaned and trimmed
  • 1-1/2 cups of pecans, chopped (may also use pecan halves)
  • 1 clove garlic (minced)
  • 1 tsp. sugar
  • 1 lemon rind, grated
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 Tbsp. lemon juice
  • 3 Tbsp. sour cream
  • ½ cup oil
Instructions
  1. Blend all ingredients except spinach for 15 seconds.
  2. Toss with spinach and serve
